I used to work at a car dealership in sales...we were under no circumstances to sell a car to someone who did not have proof of insurance in their name due to liability reasons.
I would hire an accident lawyer or a consumer rights lawyer and let them know the situation. The salesperson, the finance person, and the dealership allowed you to put false information in your paperwork in order to sell the car. You were not insured and they supplied an insurance card via your girlfriend in order to sell the car even though they knew that it was not valid insurance in your name.
It might also be a good idea to contact the Arizona Attourney General Terry Goddard, the Better Business Bureau in Arizona, and possibly the company that originally financed the vehicle. The company that financed your vehicle might want to know that dealership is putting them at undue risk, and may take action against them (it probably won't be on your behalf though).
